• 2 1/4 lbs ground chicken or 2 1/4 lbs turkey
  • 1/4 cup dark hi-quality soy sauce
  • 3 tablespoons dark brown sugar
  • 3 cloves freshly crushed garlic or 1 teaspoon garlic powder
  • 2 tablespoons ketchup
  • 2 tablespoons oregano
  • 2 tablespoons cumin powder
  • salt and hot pepper or black pepper, as desired


  1. Mix well and form into patties.
  2. Grill or pan fry until lightly browned on both sides.
  3. Serve with carmelized onions (onions sauted in oil over low heat until nicely browned).
